Spicy and stuffed slowly roasted chicken - Indian style By Bogdana Ivanova

Want to make a change this Christmas or holiday season? Try the Indian-style slowly roasted chicken and leave your family wanting more. Here is a spicy, Bollywood twist to your regular chicken recipe which is complete with all spicy goodness of the eastern cuisine. You can make your own changes to the amount of spices if you don?t like too much of it. You can follow the recipe with your choice of herbs and spices instead of the heavy Indian ?Garam Masala?. But if you are a fan of spicy food, look no further. High on spice and taste, this recipe for slowly roasted chicken is different from the usual recipes as it has a delicious curry stuffing inside. The double spice factor is sure to tickle your taste buds and give your loved ones a truly amazing treat.

Ingredients:
A small whole chicken washed and dried with a paper towel.
For the marinade:
Ginger garlic paste ? 2 tablespoons
Chili powder ? 1 tsp
Soya sauce ? 1 tablespoon
Pepper ? 2 tsp
Garam Masala powder (Dry roast spices like cloves, cardamom, pepper and fennel seeds and ground them into a fine powder) ? 1 tsp
Lemon juice ? 2 tablespoons
Oil ? 3 tablespoons

Salt to taste

Directions for making the slowly roasted chicken:
Mix all the marinating ingredients and make a fine paste. Make small cuts on the chicken surface using a sharp knife. Now take the marinade and rub it nicely onto the chicken, inside the cavity as well as out. Wrap the chicken in a plastic wrap and leave it in the fridge for a night or minimum 5 hours.

For the filling:
Large onions, thinly sliced ? 2
Ginger garlic paste ? a teaspoon
Paprika powder ? a pinch
Tomato, finely chopped ? 1
Cilantro ? a few sprigs
De-shelled hard-boiled eggs ? 2
Salt and pepper, to taste
Oil ? 1 tablespoon
Directions for the stuffing:
Heat a pan and add oil. Once the oil is heated, add the onions, the ginger garlic paste and saut?. Once the mixture gets nice and brown, add the paprika powder, salt and pepper. Now add the tomato and make a fine paste. Halve the hard-boiled eggs in the mix too. Add these to the mixture without breaking. Add chopped cilantro and keep aside. This is the stuffing.

Baking the slowly roasted chicken:
Remove the chicken from the fridge, place it on a roasting tray; drizzle with a bit of oil. Now place the made filling inside the chicken cavity. Sprinkle a bit of salt and pepper on top of the chicken. Preheat the oven to 150?C/300?F. Place the chicken into the oven and bake for 3 hours till the chicken is golden brown and oozing juices. Make a cut with a knife and see if it is done.

Heavenly smells will waft in your kitchen to announce that the chicken is getting roasted to perfection. Now take the chicken out of the oven, carve it using a sharp knife, and place it on a plate with the stuffing. You can make a basic salad with onions, tomato and cucumber and serve it with the slowly roasted chicken.

If you set out to buy a BBQ grill today, one of the options facing you is whether to fuel it with propane or natural gas. But what if you already have a propane gas BBQ. Is it worthwhile converting it?

In this article we'll help you weigh up the pros and the cons.

The Relative Costs of Natural gas and Propane

Technical tests on both gases indicate that although natural gas is much less expensive than propane (by up to three or four times for one cubic foot) you?ll need twice as much to cook the same meal. But this is more than compensated for by the much lower cost of natural gas. However, that?s not the complete story.

Grill Conversion Costs

To change your grill from propane to natural gas you?ll also have to carry out a technical conversion. This conversion involves taking out your existing gas regulator and feed pipes and replacing these with similar items designed specifically for natural gas. The conversion process increases the flow of gas to your barbecue grill to compensate for the fact that natural gas produces less cooking heat than propane.

It's possible to carry out this conversion yourself, but this is not recommended because the work involved demands a certain level of technical skill. It?s much more sensible to employ the services of a natural gas technician who will also be able to install a patio gas supply point at the same time.

However, the conversion cost is likely to be quite high ? probably in the region of $100 -$200. Therefor, you may well decide that it?s more sensible to put this money towards the purchase cost of a new natural gas grill.

Environmental Protection - Natural gas is not environmentally friendly. If it escapes into the atmosphere,it gets converted into other substances which are detrimental to it.

Convenience - Your fuel supply will be on tap and you won?t have to carry bottles of propane around anymore or change a bottle half-way through a BBQ.

Understanding the concept of Foccacia as a part of Italian cuisine (Jim Doyle)

I thought I had seen it all until I encountered their cuisine. Before my visit to Italy I had been relegated to simply reading about how good Italian cuisine was and seeing it in the movies. On my visit to Italy I was therefore keen to try and understand what the fuss was about anyway. One of the people I was with in Italy introduced me to Foccacia and I have to admit, ever since then I have never really been able to find anything better tasting. I therefore embarked on a mission to find out how this wonderful bread was made and how it became a part of the Italian culture from the start.

The word Foccacia actually has its origins from the Latin word 'focus' which simply means "hearth, place for baking". In the Roman days, Panis Focacius was a kind of flat bread that was baked on the hearth. It is thought that the recipe for this bread was actually thought out by the Greeks. However, many people associate the recipe with the Ligurian cuisine. Over time, it became apparent that the knowledge of the recipe spread and many people began to take to making this bread. A variation in the ingredients meant that as people moved from one place to another they would probably come across different recipes but all leading to a similar outcome.

Since there were many little towns on the coast of Liguria, it emerged that each town had a different manner of making the Foccacia based on the ingredients that were available to them. In some places, the bread was even considered to be some kind of cake. In some places it had with more softness owing to the oil and in other places it had biscuit-like hardness because of the Camogli. There were actually some places where the ingredients were totally different from the original recipe and the similarities with the original bread were very minimal.


I actually realized that in places like Genoa and Recco, the recipe for this bread is so different but the name is almost the same. The Foccacia that is made in these towns has a filling of cheese usually sandwiched between two layers of the dough that is almost paper-thin. There are parts of North Western Italy where the recipe for the preparation of this bread entails sprinkling of sugar onto the base of the bread. Also, there is usually an addition of honey, raisins and a shot of other ingredients that are sweet.

I learnt that across the whole of Italy, there are various formats in which the Foccacia exists and some of the various types include Barese which is found in places like Taranto, Brindisi, Bari and Lecce. There is also Alla Genovese which is very popular in Genoa and then there is Alla Barese which is mostly from the area of Bari.

Better Nutrition With Homemade Soup By Gretchen Scalpi, Rd, Cde

Many of my clients tell me how much they like having soup for lunch in the colder months, but most of the time, they name off various brands of soups bought at the store. Don't get me wrong: many commercial soups are great options for the calorie conscious. The problem with canned soups, of course, is the sodium content. Some products have an excess of 1,000 mg of sodium per serving. To my way of thinking, this is far too much salt for one simple food item. So while it's easy to turn to grocery store shelves for your lunchtime soup, consider making your own soup.

The beauty of homemade soup is that you can literally take any basic soup recipe and modify it based on ingredients you have on hand. You can make adjustments and get the sodium content reduced without foregoing good taste. Most soups start with a stock, broth, or a vegetable base. You can make your own stock if you have the time, but starting with a ready made broth can cut down on preparation time. If you buy ready made soup broth, I recommend that you read the labels carefully. Regular broth will make your homemade version of soup just as high in sodium as canned soup. The low sodium versions of broth have sodium too! I found that most of the "low sodium" brands of broth had close to 500 mg. sodium per serving. This is still too much if you are sodium conscious. I found several organic low sodium stocks with just 140 mg. per serving, so it pays to look around.

If you want to try making homemade soup for your lunches, here's an idea: make one batch pot of a different soup every week. Keep enough of the soup on hand for one or two meals, and then freeze the rest in smaller containers, preferably 1-2 portion containers. If you make a different kind of soup each week, you will soon have a "selection"of different soups in your freezer that you can choose from for a quick lunch or dinner meal. Take a single serving of frozen soup to work and you'll have a nice healthful meal ready to heat up.

Here is my favorite vegetable soup recipe:

Vegetable Barley Soup

2 Tb. olive oil

1 cup chopped onion

1 cup diced carrots

12 oz. fresh mushrooms chopped

1/2 cup barley (use pearl or hulless barley)

6 cups low sodium beef, chicken or vegetable broth

1/2 tsp coarse salt

2-3 cups chopped spinach, kale or Swiss chard

Heat oil in large pot and saut? onions and carrots until tender. Add mushrooms and cook for another 2 minutes. Add barley, low sodium broth and salt. Bring to a boil, and then reduce heat to simmer until barley is done. (Pearl barley takes about 40 minutes; hulless barley takes about 60 minutes to cook). Add chopped greens and cook for an additional 5 minutes. Serves 6.

Everyone knows what tea is, right? Tea, technically, comes from the leaves of one plant, camellia sinensis. Anything other than the leaves from this plant is not actually tea, although tea is often used as a catchall word to include all the different herbal beverages used these days.

Legend has it that tea was discovered long ago in China quite by accident. Some leaves from a nearby plant blew into a cup of hot water; a nice brown colored beverage resulted, was found to have a refreshing taste, and tea was born. However it was discovered, tea is very refreshing, whether it is black, green, oolong or white. Tea has been proven in more recent times to have wonderful health benefits. We have all heard of antioxidants in tea, helping to fight free radicals that can cause harm to the body. Tea is far lower in caffeine than coffee. It is refreshing, whether used hot or cold.

There are various types of tea, all beginning with the same leaves. Black tea is created by bruising or crushing the green leaves to expose them to oxidation and allowing them to ferment, then rolling the leaves and drying. This produces a beautifully colored beverage and has the strongest flavor of all the varieties of tea. Oolong tea (pronounced OH-long) is oxidized and fermented the same as black tea, but only for about half the amount of time and the resulting product is a lighter, more reddish beverage with a flavor all its own, somewhere in strength between black tea and green tea. For green tea, the leaves are heated immediately, stopping the fermentation process entirely, then dried and rolled. It produces a lovely light colored beverage, and is said to have the most health benefits. The processing of white tea is similar to that of green tea, but only the unopened buds of the leaves are used. It has the same health properties as green tea, but the flavor is the lightest and most delicate.

Good quality tea is a wonderful beverage. Whole rolled or twisted leaves are the best quality; the smaller the leaf, the higher the quality of the tea. The top grades are called Flowery, Golden Flowery or Tippy. Seconds, termed Choppy, are the leaves that have broken into smaller pieces. They brew a great tea, and are usually less expensive. The smallest particles leftover from the tea process, called Fannings, are what is used in tea bags. It brews tea of course, but once tasting a tea brewed from a wonderful full leaf Darjeeling Black Tea, for example, it is hard to return to a tea bag for optimal flavor.

Orange Pekoe (rhymes with gecko) is a western terminology applied to a grade of black tea; the word orange in the name has nothing to do with flavor, but could be a reference to the Dutch House of Orange using the name Orange as an implied sea" of some sort. Pekoe may be a westernized interpretation for a Chinese word meaning white hairs, referring to the fine white down on the tea leaves.

So, what are herbal beverages called? Herbal beverages are called tisanes, and may be prepared by different methods, usually infusion or decoction. It is incorrect to apply the term tea to anything infused or decocted, although tea is actually infused. Infusion is the preparation method of choice for leaves, flowers or buds; plant matter that will release its properties easily into a drinkable beverage. Placed into heated or boiled water and allowed to steep, the herbs release their goodness into the water, and then are strained out. Decoction is the method used for harder or denser plant materials, such as roots or barks that take longer to release their flavors or health benefits. With a decoction, the plant materials are brought to a boil, simmered gently for 15 minutes or more allowing the liquid to reduce, and then straining.

A Chicken Lasagna Recipe For Those Movie Nights (rajiv tiwari)

Ingredients:

* Olive Oil
* 1 onion, finely chopped
* 2 cloves of garlic, finely chopped
* 100 grams of salami, finely chopped
* 600 grams of chicken mince
* 2 tablespoons tomato pur?e
* 3 teaspoons dried oregano
* 800 g can of plum tomatoes, chopped
* ? cup chicken stock
* 60 grams butter
* 70 grams all-purpose flour
* 600 ml milk
* freshly grated nutmeg
* 250 g no-cook lasagne sheets
* 1 block parmesan
* 100 g mozzarella, grated

Directions:

1. To start making the sauce for the lasagna recipe, fry the onion and garlic in a wide saucepan in olive oil. Keep stirring and frying till it's soft but not translucent.

2. Add in the salami along with the minced chicken and stir thoroughly to make sure the chicken cooks well for the lasagna sauce.

3. Let the meat cook, stirring it frequently until it's faintly browned all over. Season the lasagna sauce recipe and add the tomato pur?e, oregano, chopped tomatoes and stock.

4. Bring to a boil, and allow it to cook constantly for about 20 minutes. It should be thick, red sauce that isn't watery.

5. Make the white sauce for the lasagna by melting the butter in a saucepan. Quickly stir in the flour and let it cook for 2-3 minutes. Slowly pour in the milk, stirring constantly.


6. Keep stirring over a low flame until it thickens and bubbles, making sure it doesn't burn.

7. Grate in the nutmeg to add a perfect flavour for the lasagna and then add some salt and pepper. Stir thoroughly and remove it from the flame.

8. Assemble the lasagna by spreading a part of the chicken sauce on the base of the lasagna baking dish. Add another layer of lasagne noodles on top and cover.

9. Spread a thin layer of white sauce on top and grate over some parmesan cheese. Add another layer of the lasagna noodles and repeat the previous step.

10. Now pour in and spread a little more of the chicken sauce on top. Keep repeating the layers again and again till you've used up all the remaining ingredients of the lasagna. Your top layer should consist of the noodles followed by the cheese.

11. Bake the lasagna in a preheated oven for around 30-40 minutes till the dish is cooked through.

12. Your lasagna recipe is ready to be enjoyed for that much anticipated movie night!

Turkey Lasagna Can Always Be The Perfect Dinner (rajiv tiwari)

Ingredients Of The Tomato Sauce:

* ? kg canned plum tomatoes
* 2 cloves garlic, chopped
* 2 shallots, finely chopped
* 75 ml olive oil
* 1 tablespoon sherry vinegar

Ingredients For The Lasagna:

* 250 grams cooked turkey mince
* 25 grams butter
* 25 grams flour
* 250 ml milk
* ? teaspoon freshly grated nutmeg
* ? heads broccoli, sliced
* 9 lasagne noodles
* 200 grams taleggio cheese
* 20 grams freshly grated parmesan

Directions:

1. Start making the tomato sauce for the lasagna by putting all the ingredients in a large saucepan and cook for an hour over a low flame, till it's nice and thick.

2. Season with salt and freshly ground black pepper according to your taste.

3. Keep aside as much as you need for the lasagna. If you have leftover sauce, don't worry. Remember that it can be stored frozen and used later.

4. Preheat the oven to 200? C to bake the lasagna.

5. Stir in the tomato sauce in a bowl with the cooked turkey mince.

6. Heat the butter in a large saucepan and then gently stir in the flour to make a smooth roux.

7. Cook this over a low flame for a few minutes. Carefully add a few tablespoons of the milk and keep whisking to make sure the white sauce for the lasagna has no lumps.


8. Keep stirring in the remaining milk in small amounts, whisking constantly until the sauce is smooth and creamy. Simmer for about 10 minutes and then remove from the heat. Season with the nutmeg, salt and freshly ground black pepper for the perfect flavoured lasagna.

9. Rinse the broccoli well and then stir it into the white sauce.

10. Pour about 100ml of hot water into the bottom of a lasagna baking dish and cover the base with 3 lasagna noodles.

11. Spread a part of the turkey and tomato mixture over the lasagna and then a spread a part of the broccoli and white sauce.

12. Top with a part of the taleggio cheese and then cover with another layer of pasta, repeating the process until all the lasagna ingredients have been used up. Your last layers should be the noodles follows by the taleggio.

13. Sprinkle a layer of the grated parmesan and cover the dish with foil.

Whether this delightful end to a meal was devised in China, Japan or America is not known. There are four legends behind the cookie in the Marketing blog:

Legend One:

Some time in the 13th or 14th Century, Mongols occupied China. The patriotic revolutionary, Chu Yuan Chang planned an uprising against the Mongols. To keep his plan top secret and share the date of the event, messages were hidden in ""Moon Cakes"". It was the right strategy as ""Moon Cakes' contained a ""yolk"" made from Lotus Paste, that the Mongols found to be unpleasing. Chu Yuan Chang replaced the ""yolk"" with a rice paper message. His plan foiled the Mongols and the Ming Dynasty came to be.

An Authentic Italian Lasagna Recipe (rajiv tiwari)

An authentic lasagna recipe is hard to come by. Try out this recipe in your own kitchen and see how simple it is!

Ingredients:

* 800 g of canned tomato puree
* 400 g chicken mince
* 3 chicken sausages
* ? carrot, chopped finely
* ? celery stalk, chopped finely
* ? onion, chopped finely
* 400 ml of water
* 2 tablespoon of oil
* A glass of red wine
* 1 litre milk
* 30gr of butter
* 4 tablespoons all-purpose flour
* Salt to taste
* Pepper to taste
* 300 g of mozzarella
* 150 g of grated parmesan
* 9 lasagna noodles

Directions:

1. Heat the oil in a pan and add in the veggies for the lasagna. Allow it to cook for a few minutes.

2. Add in the minced chicken and sausages, constantly stirring until brown.

3. Stir in a glass of red wine and let it reduce to give the lasagna flavour.

4. Pour in the tomato puree and the water and mix well. Season with the salt and pepper and let it cook for around 2 hours on a low flame. Make sure the sauce doesn't burn and add water if required for the lasagna sauce.

5. Make a roux by melting the butter in a pan with the flour.


6. Transfer the roux to a separate bowl. Pour boiling hot milk on the roux while stirring to make the mixture melt.

7. Pour the milk back into the, add salt and bring it again to a boil again while stirring. Boil for the lasagna recipe till it's a thick creamy sauce.

8. Remove from the stove and cover tightly so that it doesn't dry out.

9. Start making the layers for the lasagna before you out it in to bake. Make the first layer by spreading a spoonful of tomato and white sauce right at the bottom.

10. Add a layer of the lasagna noodles on top to cover the sauces. Add another thin layer of the tomato sauce and white sauce, and then sprinkle some of the parmesan on top. Add a little mozzarella cheese as well. Keep layering all the components and repeating the steps for the lasagna. End with a layer of the noodles right on top with some cheese.

11. Cook the lasagna in the oven at 200?C for just under an hour till the cheese is nice and bubbly on top and slightly brown.

12. Your lasagna recipe is ready for everyone to enjoy!

Vegetarial Lasagna With Pesto Sauce (rajiv tiwari)

Ingredients:

* 1 large onion, thinly sliced
* 2 sprigs of thyme
* 3 medium zucchini, sliced evenly
* 1 ? plum tomatoes, thinly sliced
* 9 no cook lasagna noodles
* ? cup basil pesto sauce
* ? pound ricotta cheese
* ? cup grated Parmesan cheese
* Zest of ? lemon
* 1 tablespoon chopped parsley
* 4 ounces shredded mozzarella
* ? cup fresh breadcrumbs
* ? tablespoon Dijon mustard
* 4 tablespoons olive oil
* 1 ? tablespoons butter

Directions:

1. Start off your lasagna recipe by adding a little of the olive oil and butter to a saucepan and heating it on a low flame until butter has melted.

2. Stir in the onions and thyme leave and continue to saut? over a low flame till the onions are nicely caramelized for the lasagna recipe.

3. Preheat oven to 150? C.

4. In a separate bowl, toss zucchini slices with a little more olive oil and season with salt to taste.

5. Arrange the zucchini slices on the baking sheets and cook in the oven for around 35-40 minutes till they're tender.

6. Increase temperature slightly and bake a little longer till they're slightly brown for the lasagna.

7. In another bowl, mix the ricotta cheese, shredded parmesan cheese, lemon zest, parsley, and add salt and black pepper to taste.


8. In a separate pan, melt the remaining butter over medium heat until it's a little bubble.

9. Add in the remaining thyme leaves, Dijon mustard and the chopped parsley.

10. Remove from heat and mix thoroughly. Now sprinkle in all the breadcrumbs and toss to combine. Keep it aside for the lasagna assembly.

11. Take a lasagna baking dish and add a layer right at the bottom of a part of the onions, zucchini and tomato slices. Then add a layer of 3 of the no-cook lasagna noodles. Add a thin, even layer of the pesto sauce on top. Put a part of the cheese mixture and spread it evenly and then add a layer of a part of the mozzarella. Keep repeating till all the ingredients are used up and your last layer is the lasagna noodles with a topping of the cheese.

12. Sprinkle the breadcrumb mixture over the top and cover lasagna in aluminum foil and refrigerate overnight so it can soak up all the flavours well.

13. Preheat oven to 180? C.

14. Take lasagna recipe out of the fridge and place it in the oven immediately.

15. Bake it for 20 minutes. Remove the foil and bake for 40 minutes more till the cheese is bubbly and golden brown on top.

16. Your lasagna is ready for all!

Gluten Free Baking, A Journey into New Territory By Chris Rawstern

Gluten-Free foods are taking their place in the world these days. We are all becoming more aware of gluten, gluten intolerance, celiac (or coeliac) disease, and what this means for so many people. While I am not gluten intolerant, I often cook and bake for functions, locally. Last year I was asked to provide little treats for a Princess Party, put on by the Dacotah Prairie Museum. Accompanied by a queen, little girls from tots to teens were invited, to learn about the lives of real princesses. They were taught how to wave properly, and curtsey.

Little girls hear the word princess and go dreamy-eyed. The program was sold out. I made lots of little treats, but found out one of the little princesses and her queen were gluten intolerant, and could not partake of many of the little treats. This was an intolerable state of affairs. I decided I needed to learn about this disease, be aware of what was involved, and provide alternatives that would be tasty and exciting.

Over the past year, I have been trying out different gluten-free flour mixtures, and making lots of goodies, mainly from my own normal recipes, converted by simply substituting gluten-free flour and adding xanthan gum. In the main, they have been a whopping success. In my honest opinion, as someone who has been baking for 42 years, some of the cakes, fruit or nut loaves turn out more moist and tender than when made with wheat flour, a very happy discovery, without a doubt. The queen mentioned above, works at the museum, so I took an afternoon to talk with this young woman and learn more about what was involved. I also had baked one of my favorite coffeecake recipes, gluten-free and took it for her and the museum staff to try. They all loved it, moist and tender and full of flavor. The young woman was happy with my experiment, as was I.

Another great help along the way was finding Shauna Aherns Gluten Free Girl website. I have studied her site extensively and learned all sorts of things there. I mixed up her gluten-free flour mixture to experiment with, as well as trying out one of her bread recipes; another success. I took some of the bread for the woman at the museum to sample, as well as a slice I slathered with homemade pesto and cheese and broiled. She exclaimed, This is the best bread I have tasted since going gluten free.

This coffeecake recipe was given to me by my best friend of 54 years, and is a terrific recipe, no matter which flour you choose. This is the original recipe, for gluten-free, I substituted a gluten-free flour mixture made up of 6 cups brown rice flour, 2 cups potato starch and 1 cup tapioca starch. I used this mixture measure for measure in this recipe, and added 1 teaspoon of xanthan gum to the sifted dry ingredients. Be sure to check the labels of ingredients for hidden wheat when making this Gluten Free.

Bundt Coffeecake

1 cup unsalted butter
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
1/2 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped nuts; walnuts or pecans are good
2 teaspoons sugar
1/2 teaspoon cinnamon

Preheat oven to 350 degrees. Cream the butter and sugar until light. Add the eggs, sour cream and vanilla and mix well. Sift together flour, soda, baking powder and salt. Add the dry ingredients to the wet and mix well. Grease a 10-inch tube or bundt pan.

Mix together the chopped nuts, the 2 teaspoons sugar and the cinnamon. Sprinkle 1/2 of this topping into the greased pan. Put in half the batter - this requires plopping small spoonfuls of the batter into the pan as the batter is very thick. Then carefully smooth it to fill in any gaps. Tapping the pan on the countertop helps. Pour on the rest of the topping and again plop spoonfuls into the pan till all batter is used.

Bake for 1 hour, or until a knife inserted in the center comes out clean. Allow to cool on a rack for 10 minutes before removing from pan. Sprinkle powdered sugar over the cake if desired. Serves 12 to 16.

GLUTEN-FREE OPTION: Replace the flour with your preferred gluten-free flour mixture and add in 1 teaspoon xanthan gum. Mix and bake as directed. Sometimes baking is a little bit longer than normal, but since the texture and moistness is so wonderful, I can wait those few more minutes.
Try this recipe, either way, and you will not be sorry.

Salmon with caper sauce

Tomato medley mix - 400 grams

Dry white wine - ? c
Butter - 50 grams

On top, arrange the lemon. Sprinkle wine on top. Up to the centre, bring the 2 long sides of the foil and fold them to seal the dish. Roll up the ends so as to enclose the fish. Bake in the preheated oven for 40 minutes.

Over medium heat, in a small frying pan place the butter. After 2 minutes, add the lemon rind and the capers. Cook till the capers turn crispy. Season with pepper and salt. Onto a serving platter, gently transfer the salmon and sprinkle the caper sauce and parsley onto it.


Salmon with papaya mojo

Ingredients:
Dried oregano - 1 spoon
Sweet paprika - 1 spoon
Crushed garlic cloves - 3
Olive oil - 1.4 c
Skinless salmon fillet - 1 kilogram
Sunflower oil - 2 spoons
Papaya mojo:
Olive oil - ? c
Thinly sliced red onion - 1 small
Papaya - 1, cut into cubes
Drained and rinsed black turtle beans - 800 grams
Roughly chopped coriander leaves - 1 bunch
Finely grated zest and lemon juice - 2 limes

Preparation: Preheat the oven to 180 degrees C. In a bowl, place the paprika, oregano, olive oil and garlic and toss it. On a chopping board, place the fish and onto the top side of the fish, rub the marinade. Over high heat, place the sunflower oil in a non-stick roasting pan. Warm it for 2 minutes and add the fish, keeping the marinated side facing down and cook for 5 minutes or till the fish flesh gets blackened. Bake it for 10 minutes after transferring it to the preheated oven.

Meanwhile for the papaya mojo, in a bowl, place all the ingredients and mix them. Toss well to combine. Keep it aside. Onto a platter, invert the salmon and top it up with papaya mojo. Serve with extra lime halves and coriander leaves.

Cookie Making Made Easy My Busy Mom Method By Chris Rawstern

In the early 1970s, when I was very young and with small children to care for, I had a few cookie recipes I would make very often, because they were simple recipes, with ingredients I usually had at hand. Cookies are a terrific snack, don?t require utensils to pick up and eat and can be made ahead for a party. However, even with all that, they are just not my favorite things to make, because they need to be made either by dropping individually onto the baking sheet, rolling out and cutting (making a mess on the counter and more cleanup), or the often added step of having to chill the dough before working. I like immediacy. I want to mix up a recipe, bake it, clean up and be done.

One morning I made a batch of these cookies, finally popped the last pan in the oven, and set the timer. Itching to get outside for a bit and see what the children were doing, I went out and got distracted. By the time I remembered the cookies in the oven, they had burnt and shrunken down to tiny little black hockey pucks - not even the dogs had any interest in them! It pays not to get distracted when baking. This was the last straw. I had to think of a better way.

I came up with a brilliant idea that I call my Busy-Mom-Method one I use to this day. Rather than take the time to make all the individual cookies by batches, with separate baking times (and time to get distracted), I would roll the cookie dough directly onto a greased baking sheet, working it evenly to the edges and baking it as one large cookie. It is best to use a baking sheet that has three open sides, as it is simpler to maneuver the rolling pin and get the cookie rolled evenly. Keep in mind also, that a little more flour may be needed in the dough to allow for lifting it out and forming into a rough rectangle for rolling. Also, a little extra flour over the surface while rolling helps to keep the rolling pin from sticking. Try not to add any more flour than absolutely necessary, or the cookies will come out denser and harder.

It takes a few minutes more in the oven with one large cookie, but it comes out perfectly. Just watch for the edges to be golden, and the center to be set. With these cookies, I also make a simple icing that is just 1 1/2 cups of confectioners sugar, a pinch of salt, 1/2 teaspoon of vanilla and enough water or milk to make a relatively thick consistency (very slow to fall from the spoon). Spread this over the hot cookie straight from the oven. The hot cookie warms the icing, making it melt and spread easily, using the back of the same spoon I used to mix the icing. I am all for less cleanup! Once the cookie cools, the icing dries and hardens, and I just cut the large cookie into small bar or square shapes, and voila, cookies in half the time. Two of my favorite recipes for this method were Hermits and Simple Vanilla Cookies. If you are a busy mom, try this method with any simple cookie dough. The Hermit cookies had raisins in them, but the thickness of the dough was no less than the thickness of the raisins, so it still worked well.
Simple Vanilla Cookies

Makes about 7 dozen

1 cup unsalted butter
2/3 cup sugar
2 teaspoons vanilla extract
1 teaspoon salt
2 eggs
2 3/4 cups all-purpose flour

Cream butter, shortening and sugar. Add vanilla and salt. Add eggs, one at a time, beating well after each. Stir in flour, mixing well. Drop from a teaspoon 2 inches apart on a greased cookie sheet. Flatten with floured, flat-bottomed glass. Bake in a 375 degree oven for 8 to 10 minutes. Remove immediately from pan.
